Oh my word...
Just try these Almond Flour mini muffins from Following The Bean; you will not be sorry. And I can almost guarantee that every bean will love them too. Even just licking the spoon was nearly enough to make me drool over these babies...
They are so easy to make. I did exactly what Cath said, and threw all the ingredients into the blender, spooned into a muffin tray, into the oven for 20 mins and DONE!
Here are what you'll need to make these pretties..
1 ¼ cup of almond flour
¼ cup of Cocoa (Cath said she used Hot Chocolate, but I did have cocoa so it got used)
¼ tsp. Baking Soda
2 medium eggs
2 Tablespoons of coconut oil
¼ cup pitted mejool dates
½ tsp. Vanilla Extract (is vanilla essence the same thing? 'Coz thats what I used)
I just have a feeling I am going to be making a lot of these for a snack in the car, in the store, on the way home from school (and could I sneak a few for breakfast with coffee?)
If you're not "Following the Bean" yet, you really should. I love how real Cath is, about everything.
